A new me…

So I told y’all I’d be around more and I meant it. Don’t get super excited,though…two posts in two days is probably going to be a scarce thing…. But Ima try to fill you all in on “the new me”.

No, I haven’t had plastic surgery or any surgery for that matter. I haven’t yet lost the weight I want to and I haven’t come into any money.

I’m simply trying to be the best me I can be. You know, taking better care of my body, mind and soul. This the season, I guess. New Years and all…no I didn’t make any resolutions or anything, but what better time of year to make such needed changes,right?

Plus, I wanted to post from my new Kindle Fire… 😉

In a rut…

I know, I know… I said I was back and I haven’t written anything since. I’d like to blame on a crazy schedule, not enough time in the day or some other big reason.

The fact is, I just haven’t had much to say. I’ve been in a bit of a rut lately and I’m not sure why… I always have 10,000 things going on in my head and only about half of them make any sense.

I am going to make more of an effort to be here, though. I can’t promise it will be anything very exciting, but I think it might be therapeutic in some way.

I said this blog was making some changes and it will be. I’ll still try to share yummy stuff with y’all as food is still a love of mine. You might just have to deal with a lot of personal posts, too.

I’m back!

I know I said I was going to be blogging some where else,  but I’ve changed my mind.  I’m back and I’m back to stay, for the foreseeable future.

The busy part of my year is going to be winding down here soon,  so I will have more time to blog. Actually, it will be a little longer than that,  because we are going out of state for my sister’s wedding.

After that though,  I’m hoping to bring you some new, delicious and healthy recipes! 

Good to be back!  I’ll try to get around to see everyone and see what y’all are up to.

The fabulous peeps over at NuNaturals contacted me recently and wanted to know if I would like to try some of their new all natural, sugar-free products. I was like, Ummm YES! I love their products. I have some recipes on here tagged under ‘sugar-free’ that use their stuff if you’d like to look them up. NuNaturals uses Stevia and other all natural sweeteners in their products. One of the products they said they wanted to end was their new chocolate syrup. I knew I wanted that! I had tried one of the most popular national brands sugar-free version and did not like it. I’ve been a little gun-shy about trying another, but when NuNaturals contacted me, I knew for sure I wanted to try their new syrups because I love their other products. They sent me a simple syrup, chocolate syrup and a chocolate mint syrup, among other things.

I decided I would make a chocolate coffee of sorts with my new, delicious syrup. I could probably try it with the chocolate mint syrup as well…I might just do that.

Chocolate Coffee **sugar-free** (Click HERE to print recipe)

Stuffs:

  • 1-2 T. powdered creamer(depending on how creamy you want it)
  • Splenda to taste (or your favorite sugar-free sweetener)
  • 1-2 t. NuNaturals NuStevia Cocoa Syrup (depending on how chocolatey you want it)
  • 12-16 oz. your favorite coffee (depending how much coffee taste you like)

Steps:

  1. Pick your favorite mug, cup or travel mug.
  2. Spoon the desired amount of creamer into your cup.
  3. Now add your sweetener.
  4. Next squeeze 1-2 t. NuNaturals NuStevia Cocoa Syrup into your cup. You can add more, to taste, being careful not to add too much as it is sweetened with stevia and will have a bitter taste if you use too much.
  5. Last, but definitely not least, pour coffee over everything and mix well with a spoon.
  6. Taste and adjust flavors as needed to your liking.

Now, you could add so many things to this to make it yummy. Cinnamon, mint, caramel extract, the possibilities are practically endless. Go crazy with it. Have fun!

Not Your Mama’s MeatLoaf

Well, the title ‘Not your Mama’s MeatLoaf’ isn’t exactly true…this is in fact the recipe my mother-in-law uses, with a couple tweaks. Because I try to eat gluten-free most of the time, I use gluten free crackers in mine and I use barbecue sauce as well as ketchup. But other than that, this is basically her recipe. This Not Your Mama’s Meatloaf is so good, you’ll burn your recipe!

This is somewhat of a sponsored post. The fine people over at Glutino Foods sent me some gluten-free Cheddar Crackers that I used for the ‘bread crumbs’ in this recipe. They are amazing and made this meatloaf delicious!

Not Your Mama’s MeatLoaf (Click HERE to print recipe)

Stuffs:

  • 2 lbs. lean ground beef (can use venison and beef, lamb and beef, whathaveyou)
  • 1 medium onion, chopped
  • 1/4-1/2 c. crushed crackers (I used some gluten-free Cheddar Crackers from Glutino Foods, they were AMAZING)
  • 2 large eggs
  • 1/3 c. each ketchup and your favorite barbecue sauce
  • salt and pepper to taste
  • more ketchup and barbecue sauce for the top

Steps:

  1. Preheat your oven to 375° F.
  2. Spray a loaf pan with non-stick cooking spray; set aside.
  3. In a large bowl add all ingredients; mix well with your clean hands, making sure to incorporate all ingredients.
  4. Pat into prepared loaf pan.
  5. Squirt top with barbecue sauce and ketchup in a cool design on top.
  6. Bake for 1h 30m or until juices run clear and meat is no longer pink.
  7. Enjoy with aside of veggies, potatoes and/or a nice salad.

This Not Your Mama’s MeatLoaf is so amazing, please try it! You might just keep this as your go to meatloaf recipe! I did!

Shish Kabobs

By a raise of hands, tell me how many of you have made shish kabobs…okay okay. So, what do you like on yours? I LOVE veggies on mine. Onions, mushrooms, tomatoes, the works! And what meat do you use on your shish kabobs? The possibilities are close to endless…pork, beef, shrimp, lamb, heck you might even be able to use tofu! Eh…maybe not tofu.

You can marinate your meat if you want to as well. I did not marinate mine this time around, but I have before. I also used pork this time. I have had good luck with beef and venison before. And I always have lots of veggies! You don’t have to use veggies, though. Put what you like on them. In fact, you could use only veggies if you wanted or only meat! Hey, I am not the boss of you…

Shish Kabobs  (Click HERE to print recipe)

Stuffs:

  • 1-1 1/2 lbs pork (can use beef, chicken, venison, etc.) cut into bite size pieces
  • 2 bell peppers washed, seeded and cut into chunks
  • 2 medium size onions, peeled and cut into chunks
  • mushrooms
  • tomatoes, washed, cut into chunks
  • salt and pepper to taste for veggies and meat

Steps:

  1. Wash, seed and cut all your veggies; set aside.
  2. Trim most but not all of the fat from your meat; cut into bite size pieces.
  3. Season veggies and meat well.
  4. Preheat our grill.
  5. Start putting veggies and meat on your skewers, alternating meat, veggie, veggie, veggie, veggie, meat, and so on.
  6. Grill shish kabobs over medium heat until pork is no longer pink and juices run clear.
  7. Remove from grill and allow to cool a few minutes before serving.
  8. Serve with a nice big salad or another veggie!

MMMmm, these shish kabobs are so good.

Food Should Taste Good

I could just post ^^that^^ as is and it would prove my case. But I won’t. I’m going to share something with you today that will knock your socks off!

When I got the e-mail asking if I would like to review their product, I was like sure, I’d love to try your healthy, non-GMO chips and pita puffs. They are certified gluten-free & non-GMO, certified vegan & kosher, and cholesterol free as well. They’re practically health food. But I have to say, I was a little skeptical, I mean they are practically HEALTH FOOD!

I had no reason to be skeptical my peeps! These chips are amazing! Food Should Taste Good sent me lots of yummy stuff. They were unable to end the pita puffs, though…which was a bummer, but they were able to send all this…

The only one I didn’t really care for was the Jalapeño. But it has nothing to do with the product itself, I just don’t do spicy stuff. My husband and daughter thought they were great! I LOVED all the other flavors! I thought about making a recipe for a dip or sauce or something for these, but they are so good, you don’t need one. I do like to take cream cheese just in a bowl topped with salsa and dip tortilla chips in it. The blue corn chips were great dipped in this!  🙂

And I loved that they are made of natural ingredients that are non-GMO and gluten-free! The fact that they taste good is fabulous, because who cares if they are healthy if they don’t taste good! Am I right??

I also love that Food Should Taste Good has a Food Should Do Good Campaign this year in which they’re providing support in the fight against breast cancer by donating $100,000 to Play for P.I.N.K.

Exhausted

I am sorry I haven’t been around much lately. I have reviews to do and giveaways…but I have been exhausted lately and the last thing on my mind has been posting on here. I know that sounds bad, but it is the truth. I have a family and camp things and just so much else to worry about. And honestly all that comes first. Have you ever been so exhausted you couldn’t sleep? Yeah, that’s me these days.
