I have been feeling out of sorts lately, which is why I haven’t been here a lot, so I’m going to keep this short and sweet. Udi’s and I are going to give one of you a $30 prize pack! That’s right, $30 worth of Udi’s fabulous gluten-free product! You’re welcome…

You have all heard me go on and on about their frozen burritos, brownie bites and even their steel-cut oats. I just LOVE their products. I really like that they are consistent in quality. Whether you are buying their frozen product, pre-made items or their boxed/bagged mixes, you are getting something high quality that will taste good, hold together well and have good texture.  All of which are important to those of us who want our gluten-free foods to resemble their gluten-filled counterparts. Udi’s Frozen Burritos

I’ve told you before and I’m saying it again…I love Udi’s brand. They have continuously impressed me with their top quality, delicious gluten-free foods. From frozen to boxed, it’s always great. Udi’s frozen burritos were no different. They were delicious. They sent me a bunch of different flavors to try and they were all pretty delicious.

Some were breakfast burritos and some were just regular burritos. I enjoyed them all.

See? Fabulous! These Udi’s frozen burritos had lots of flavor, were very filling and use great ingredients such as cage-free and antibiotic free eggs. The bacon and chicken they use is from animals that are hormone and antibiotic-free as well! I love that! I can pronounce all the ingredients on the ingredient lists, which is awesome.

Important Info:

The most fat found in one of these burritos was 10g. The most sodium in one was 470mg. The calories was an amazing 200-250. Carbs in these ranged from 33-39g. Dietary fiber was between 4-6g. The protein range was 8-11g.

I give Udi’s Frozen Burritos ♥♥♥♥ (4 out of 5) I would give 5, but they lack a bit of seasoning (salt). I think my favorite was the Chicken Burrito or maybe the Sausage Breakfast Burrito. Or… 😉

I really enjoyed them and so did my family. I didn’t feel like cooking one evening so we all had burritos! It was fabulous! So easy to prepare… just wrap in a damp paper towel, toss in the microwave for 1m 30s or so and you’re good to go.

Apparently Udi’s and I are BFF’s or something because they wanted to send me some gluten-free items to try and then review. Of course, me being the considerate, helping and generous person that I am, I agreed to do this for them. *cough* Once I have done that, we are going to give a free product to one of my readers in a giveaway! WooHoo!! I am PUMPED!!

I am so excited right now, I can barely sit still long enough to type this!! I don’t even know how many times I had to backspace and retype that sentence because I was typing too fast! I’m not even gonna lie.  LOL

I got two boxes of product rom Udi’s!! TWO BOXES!!  They sent me so much stuff!!! I can’t believe how much they sent!! Bagels, muffins, pizza  crusts, burritos, oh my… that’s not even all of it.  So much to review!!!

Udi’s Soft & Chewy Dark Chocolate Brownie Bites

These are AMAZING. They are moist and full of rich dark chocolate taste. Each brownie bite is actually 2-3 bites for the average person, so they aren’t huge but I was satisfied with one. And that is saying something. I am a huge fan of chocolate! Especially dark chocolate.

My rating system will be hearts since I love them.  1 being horrible all the way up to 5 being fabulous!!

If these were sugar-free, they would get 5 hearts! They are made with pure cane juice, which is better than if they were made with refined sugar.

Udi’s Gluten Free Soft & Chewy Oatmeal Raisin Cookies

I am really loving Udi’s gluten-free products.  This gluten-free lifestyle is going to be smooth sailing if I have all this yumminess to look forward to! I had heard such horror stories of gluten-free products being dry and void of flavor. I guess they’ve come a long way in a short time because I have had only a couple things I’ve thought were actually bad.

These Udi’s Gluten Free Soft & Chewy Oatmeal Raisin Cookies are exactly what they say they are…soft, chewy and delicious!


I don’t expect to be eating all these sweets all the time, though.  After all, I am trying to lose weight.  And we all know that isn’t going to happen eating all these cookies and muffins and brownies!! As much as I’d like to, I just can’t! It has been fun trying them and reviewing them, though, I will say that! 🙂

Soft and Chewy Oatmeal Raisin Cookies (gluten, soy and nut free)

These cookies were no exception!  Soft and chewy and moist.  With raisins throughout.  Just the right amount of sweetness.  Soy and nut-free as well as gluten-free. Perfect! These were my husband’s favorite of the cookies/sweets. I feel he is biased, though… oatmeal raisin cookies are his favorite.  😉

Gluten-Free Fajitas

I got some gluten-free tortilla shells from Udi’s in the ginormous box of goodies they sent me, so I set about making gluten-free fajitas this afternoon.  I had everything I needed but the fajita seasoning itself.  So I checked a few things out and came up with what I thought should work.  We were really happy with what happened.

Gluten-Free Fajitas with Homemade Fajita Seasoning

Gluten-Free Fajitas (Click HERE to print recipe)

For The Seasoning:

  • 1 T. garlic granules
  • 1 T. chili powder
  • 1 t. cumin
  • 1 t. paprika
  • 1/4 t. cayenne pepper
  • 1 t. kosher salt
  • 1 t. cracked black pepper

Add all ingredients to a small bowl and mix well.  This will be enough for two batches of gluten-free fajitas if mixed with the amount of chicken and veggies given below.  Store unused spices in an airtight container for the next time you make fajitas or make a double batch.

For Filling:

  • 1 – 1 1/2 lbs skinless, boneless chicken breasts
  • 1 large bell pepper, any color
  • 1 large onion, peeled and finely sliced
  • Season chicken and veggies to taste with salt and pepper
  • enough coconut oil to keep chicken from sticking to the pan
  • 1/3 -1/4 c. water to cook down spices

Begin by cutting chicken into large, but bite size pieces.  Cook over medium-high heat with 1-2 T. coconut oil, until no longer pink.  Once chicken is done, add onion and peppers.  Cook chicken and veggies for a couple of minutes to soften veggies a little.  If you are making a single batch, sprinkle half of your spices evenly over your chicken and veggies. Add 1/3 c. -1/4 c. water to dilute and cook down your spice mixture. Stir to make sure water and spices coat all chicken and veggies well. Continue to cook until veggies are soft and most of the water has evaporated.

6-8 Gluten-Free Tortilla Shells

Suggested Add-Ons:

  • lettuce
  • tomatoes
  • cheese
  • non-fat plain greek yogurt of sour cream
  • salsa

We usually save lettuce and tomatoes and that stuff for tacos.  I like just cheese and yogurt on my fajitas.  You can use whatever you like.  I’m not the boss of you!  😉

Udi’s Gluten-Free Tortilla Shells

I am giving these ♥♥♥ . They had good flavor and held up pretty well to the fajita mixture, but were thick and the texture was off.  I think it’s just more of the fact I’m not use to them than anything, but of everything Udi’s sent me I’d have to say these were my least favorite so far. I would prefer them to a corn tortilla, though… I will review the pizza crusts tomorrow.

Try this fajita seasoning mix, you won’t be sorry!!

Udi’s Bagels

One of my top 5 breakfast foods would have to be bagels. I am not a huge breakfast food person, but there are a couple of breakfast foods that I would miss if they disappeared.  Bagels would be one of them.  Udi’s bagels are great.

My daughter introduced me to this breakfast sandwich that is amazing. You take a bagel and an egg and a sausage patty, make a sandwich with them…angels sing, velvet robes part and, well I don’t know what else but it’s almost a spiritual experience!

You can’t really do that with a cinnamon raisin bagel…well, some might, but not me. Now for the review:

These bagels are great. They are full of flavor. The only thing about these is they don’t have that chewy texture like regular bagels. I can live without it, though. Especially if they aren’t going to make me sick! As with the other items from Udi’s, I can pronounce everything on the ingredient list. I can’t wait to try some of the other flavors and have one of my egg and sausage sandwiches!!
