I am part of a network of bloggers, companies and others trying to bring awareness about food allergies to the masses. It’s something that can no longer be ignored. With more and more people being diagnosed with one or more food allergies, it’s becoming more and more important to be aware of what we are putting on our tables! Freedible is an awesome site where bloggers, companies and others can go to meet up with others who are eating, living, blogging about the same things they are!
As the head cook of a Christian camp, I have to be very aware of what I put on my tables here. It seems more common now than ever to have at least one and usually more than one person with an allergy to something I have on the menu. In fact, this last week of camp, I had teens with these allergies…. peanut, cashew, tomato (3), banana and pineapple. It seems like I’m forgetting one. But these are the major ones, anyway. So when cooking spaghetti, I had to come up with options for the 3 teens who could not have tomatoes. When I made fruit skewers, I had to cut all the other fruit before the bananas and pineapple and make the skewers for those with allergies to those fruits first and then cut the bananas and pineapples and make the other skewers. It must all be carefully planned out and executed so no one gets sick!
The next camp we have coming in, I know we have a couple girls who are gluten intolerant like I am. In fact, the one has Celiac Disease. I’m not sure about other allergies, I will have to talk to the camp nurse.
At first I thought it was kind of a pain to have to deal with, to be honest. Because I cook on such a large scale and then have to prepare something else for a small group. But since I have learned so much about food allergies and how they affect the body and EVERY aspect of your life, I have become very passionate about helping others and spreading the word about food allergies. Especially gluten intolerance, since that is what I deal with personally.
It’s pretty amazing, just to be able to find REAL people who are going through the same kinds of things I am. To be able to related with people who know how you feel. To talk to people who know what you’re going through. I like that.
