I’m back!

I know I said I was going to be blogging some where else,  but I’ve changed my mind.  I’m back and I’m back to stay, for the foreseeable future.

The busy part of my year is going to be winding down here soon,  so I will have more time to blog. Actually, it will be a little longer than that,  because we are going out of state for my sister’s wedding.

After that though,  I’m hoping to bring you some new, delicious and healthy recipes! 

Good to be back!  I’ll try to get around to see everyone and see what y’all are up to.

Food Should Taste Good

YES.IT.SHOULD. (food should taste good)

I could just post ^^that^^ as is and it would prove my case. But I won’t. I’m going to share something with you today that will knock your socks off!

When I got the e-mail asking if I would like to review their product, I was like sure, I’d love to try your healthy, non-GMO chips and pita puffs. They are certified gluten-free & non-GMO, certified vegan & kosher, and cholesterol free as well. They’re practically health food. But I have to say, I was a little skeptical, I mean they are practically HEALTH FOOD!

I had no reason to be skeptical my peeps! These chips are amazing! Food Should Taste Good sent me lots of yummy stuff. They were unable to end the pita puffs, though…which was a bummer, but they were able to send all this…

The only one I didn’t really care for was the Jalapeño. But it has nothing to do with the product itself, I just don’t do spicy stuff. My husband and daughter thought they were great! I LOVED all the other flavors! I thought about making a recipe for a dip or sauce or something for these, but they are so good, you don’t need one. I do like to take cream cheese just in a bowl topped with salsa and dip tortilla chips in it. The blue corn chips were great dipped in this!  🙂

And I loved that they are made of natural ingredients that are non-GMO and gluten-free! The fact that they taste good is fabulous, because who cares if they are healthy if they don’t taste good! Am I right??

I also love that Food Should Taste Good has a Food Should Do Good Campaign this year in which they’re providing support in the fight against breast cancer by donating $100,000 to Play for P.I.N.K.

Exhausted

I am sorry I haven’t been around much lately. I have reviews to do and giveaways…but I have been exhausted lately and the last thing on my mind has been posting on here. I know that sounds bad, but it is the truth. I have a family and camp things and just so much else to worry about. And honestly all that comes first. Have you ever been so exhausted you couldn’t sleep? Yeah, that’s me these days.

Gluten and Sugar-Free Pumpkin Pie

When I went gluten and sugar-free I thought I’d never be able to have pumpkin pie again. I was DEVASTATED! Pumpkin pie is the ultimate Thanksgiving desert, everyone knows that! So when I realized I can make this gluten and sugar-free pumpkin pie, I was ecstatic!

MMMmmmm, so good!

Gluten/Sugar-Free Pumpkin Pie (Click HERE to print recipe)

Stuffs:

  • 2 (12 oz.) cans evaporated milk
  • 1 t. salt
  • 2 t. cinnamon
  • 1 t. ginger
  • 1/2 t. cloves
  • 4 large eggs
  • 1 (29 oz.) can pure pumpkin (NOT pumpkin pie mix)
  • 1 3/4 c. Splenda® (or granulated sweetener of choice, adjust amount as needed)

Steps:

  1. Preheat oven to 375º F. Spray a 9×13 baking pan with non-stick cooking spray.
  2. Pour milk into large bowl, followed by salt and spices; allow to sit for several minutes.
  3. Add eggs, pumpkin and sweetener.
  4. Stir to mix everything together well.
  5. Allow to sit a few minutes.
  6. Pour into prepared baking dish.
  7. Bake for 1h 10m or until set and starting to brown on top.
  8. Serve with Whipped Topping.

This gluten and sugar-free pumpkin pie is so good, you’ll never miss the crust or the sugar! The best part…you can eat it and not feel guilty! Well, that’s second best, the very best is you can eat it and not get sick!!

A Different Direction

Hai guys!

I’m sorry I haven’t been around much. I have been soul-searching and trying to figure out what I want to do with this blog and I think I finally figured it out.  I think I want to head in a different direction.  I will still be posting yummy recipes and delectable photos, they just won’t be focused on the THM plan. I tried that plan for several months and I did lose weight at first, but then I gained quite a bit in a short amount of time. Now I not only have to lose what I did before, but what I gained on THM…

NOT COOL!

So, I’m heading in a different direction as far as weight loss and as far as this blog. It will still be gluten and (refined) sugar-free as I am pretty intolerant of both but you won’t see new THM recipes posted. You can still find the old recipes in the archives if you choose to search for them. Up in the top middle of my home page, you can search my blog by tag, category or date. I love that feature! Or you can just type THM into the search bar in the top right corner of the home page! Easy peasy!

I will also be adding more personal posts to NowICanEatCake. They may include weight loss goals and/or photos. Posts may also include topics such as religion, homemaking tips, reviews and or giveaways!

Gluten-Free ‘Spaghetti’

If you’re like me when you think of spaghetti, you automatically think of long, thin noodles.  Well, there is nothing saying you have to use those kind of noodles.  In fact, you can use any kind of noodle you want to.  For me, I need to have a Gluten-Free Spaghetti. So, whatever your need or want is, use your imagination.  Anything goes.  As long as you have noodles and tomato based sauce, you have spaghetti!  🙂

You can used brown rice pasta, corn pasta, rice pasta. There are any number of choices out there. For my THM friends there is Dreamfields Pasta. It is, however, not gluten-free so that is not an option for me.  When I make dinner, my whole family eats gluten-free because I don’t want to have to make two separate meals because I can’t have gluten.  That’s just too much work for my taste.

For quite some time now, I have been making my own spaghetti sauce. Sort of… I start with a canned sauce and add to it. If I wanted to , I could make one totally from scratch, but I got this ‘recipe’ from a full-blooded Italian woman who makes her spaghetti sauce like this so I figure if it’s good enough for her, it’s good enough for me!  😉

So here’s the recipe…

Gluten-Free Spaghetti

Get This:

  • 1 lb. gluten-free pasta, or spaghetti squash works too (whatever noodles you like, I’m not the boss of you!) (If you are a THM’er, use Dreamfields Pasta and only cook what you will eat in one sitting as it cannot be reheated)
  • 1 lb. lean venison, turkey or chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 c. fresh mushrooms
  • garlic salt and pepper, to taste
  • 1 can or jar of spaghetti sauce (make sure to get one WITHOUT high fructose corn syrup or added sugar)
  • 1 can all natural organic diced tomatoes
  • Italian seasoning, garlic powder and pepper to taste
  • Truvia, to taste (or your favorite sweetener) (yes, you add ‘sugar’ to the sauce to cut the acidity)

Do This:

  1. Cook your pasta until JUST done. You will cook with the sauce a bit. If using Dreamfields Pasta, cook according to packaging.
  2. Brown onion, lean ground meat, mushrooms and garlic together in medium pan until hamburger is no longer pink and onion is translucent. Season with garlic salt and pepper to taste.
  3. Once the hamburger mixture is done, add sauce, tomatoes, Italian seasoning, garlic powder and pepper.
  4. Add cooked pasta and stir to mix well. (If you are a THM’er, DO NOT add pasta to sauce, as you cannot reheat pasta).
  5. Simmer sauce for about 5 minutes.
  6. Add Stevia or sugar to taste.  My husband likes his sauce on the sweet side.
  7. Enjoy!

**note: for every 4-6 people just add another can of sauce and another can of tomatoes**

Ok, by a raise of hands, how many of you like peanut butter?  **wildly raises her hand** Yeah, I LOVE peanut butter. My family loves peanut butter. So when I had the opportunity to try PB Crave, I jumped at the chance. Like, almost literally JUMPED at it!  Hehe…

PB Crave is unique, in that they don’t sell just any peanut butter. They sell FLAVORED peanut butter. You read that right. FLAVORED peanut butter!

Cookie Nookie for example, has wild honey, chocolate chips and cookie dough flavor added to it.

Choco Choco PB Crave has wild honey, sweet and dark chocolate added to it. This one was my personal favorite. I know you’re all shocked and appalled that I liked the one with two kinds of chocolate in it the best!  Haha…

The Razzle Dazzle has wild honey, white and dark chocolate and natural raspberry flavoring in it.

And last but not least, well maybe least as this was my least favorite, PB Crave Coco Bananas. This one has wild honey, chocolate and natural banana flavoring. I think it was something about the banana flavoring I didn’t care for in this one, which is weird because I love bananas.

I wasn’t sure what to think about this product because the last peanut butter product I tried for a review was terrible, but I went into this with an open mind and I was pleasantly surprised at how much I really liked this product. PB Crave has the rich peanut(y) flavor you want but then adds a touch of sweet with the wild honey and then the excitement of the other flavors and surprisingly, they don’t overpower the peanut butter and they blend well with it as well.

I am giving PB Crave Peanut Butter ♥♥♥♥ (out of 5)

If I had liked all the flavors, I would have given them 5 hearts out of five. It’s peanut butter peeps, so it has some fat. It has some sugar in it from the honey and chocolate, but the sugars are actually quite low. It’s not health food, so I suggest eating it in moderation. Enjoy it as a treat now and then. I just had a fantastic idea….PB Crave would make awesome peanut butter cookies! Wish I would have thought of that before, when I still had some! Oh well…maybe I will have to go get some!
