I could just post ^^that^^ as is and it would prove my case. But I won’t. I’m going to share something with you today that will knock your socks off!

When I got the e-mail asking if I would like to review their product, I was like sure, I’d love to try your healthy, non-GMO chips and pita puffs. They are certified gluten-free & non-GMO, certified vegan & kosher, and cholesterol free as well. They’re practically health food. But I have to say, I was a little skeptical, I mean they are practically HEALTH FOOD!

I had no reason to be skeptical my peeps! These chips are amazing! Food Should Taste Good sent me lots of yummy stuff. They were unable to end the pita puffs, though…which was a bummer, but they were able to send all this…

The only one I didn’t really care for was the Jalapeño. But it has nothing to do with the product itself, I just don’t do spicy stuff. My husband and daughter thought they were great! I LOVED all the other flavors! I thought about making a recipe for a dip or sauce or something for these, but they are so good, you don’t need one. I do like to take cream cheese just in a bowl topped with salsa and dip tortilla chips in it. The blue corn chips were great dipped in this!  🙂

And I loved that they are made of natural ingredients that are non-GMO and gluten-free! The fact that they taste good is fabulous, because who cares if they are healthy if they don’t taste good! Am I right??

I also love that Food Should Taste Good has a Food Should Do Good Campaign this year in which they’re providing support in the fight against breast cancer by donating $100,000 to Play for P.I.N.K.

Almost Homemade Cinnamon Raisin Bread

As most of you know, I have been gluten free (mostly) for almost a year now. I work with a couple different companies, for which I do reviews and giveaways. I enjoy doing this so much. Sometimes I just try the product as is and review it. Sometimes I make  recipe with the product. I really enjoy doing this. The product I am reviewing today is Glutino Foods Favorite Sandwich Bread. This is a mix, so you must prepare it yourself, but I decided I wanted to use it to make a recipe instead of just making plain bread. I decided to make this Almost Homemade Cinnamon Raisin Bread.

It turned out great! And just look how it rose out of the pan! Can you believe that it’s gluten-free?!?! I also love the color, so golden brown… YUM!

Almost Homemade Cinnamon Raisin Bread (Click HERE to print recipe)

Stuffs:

  • 1 box Glutino Foods Favorite Sandwich Bread
  • 3 t. cinnamon
  • 3 T. Splenda® Brown Sugar Blend
  • 1 3/4 c. warm water
  • 2 1/2 t. vanilla
  • 4 T. oil
  • 2 eggs
  • 3/4 c. softened and well-drained raisins (red or golden)

Steps:

  1. In the bowl of your stand mixer, pour the bread mix and the package of yeast included in the box, Splenda and cinnamon. Start mixer and stir to combine. (You can just use the paddle because this bread will remain pretty loose).
  2. Now add warm water, vanilla, oil and eggs; start mixer on low-speed and mix to combine. Once everything is mixed fairly well, turn mixer to med-high speed and mix for about 3 minutes.
  3. Once mixed, add softened raisins and mix just until raisins are incorporated.
  4. Spoon bread dough into greased 9″x5″ bread pan. Allow to sit while you preheat your oven to 375° F.
  5. Once your oven is hot and your bread has risen to the top of the pan, bake your dough for 30m or until golden brown and it sounds hollow when tapped.
  6. Allow to cool 5-10 minutes in the pan and then turn onto a wire rack to cool completely before cutting to serve or putting in an airtight container to store.
  7. Best if stored in refrigerator or freezer.

You could totes change this Almost Homemade Cinnamon Raisin Bread up by using any dried fruit and using different spices to go with whatever fruit you’re using.

My Review:

I am giving Glutino Foods Favorite Sandwich Bread ♥♥♥♥

This bread has great flavor and texture. It isn’t dry and doesn’t fall apart like some gluten-free breads I’ve tried. I really like it. It does have a bit of an odd aftertaste. I think it’s the pea protein. It’s not enough to totally turn me off to this yummy bread, though, which is why I gave it 4 hearts out of 5!

Ok, by a raise of hands, how many of you like peanut butter?  **wildly raises her hand** Yeah, I LOVE peanut butter. My family loves peanut butter. So when I had the opportunity to try PB Crave, I jumped at the chance. Like, almost literally JUMPED at it!  Hehe…

PB Crave is unique, in that they don’t sell just any peanut butter. They sell FLAVORED peanut butter. You read that right. FLAVORED peanut butter!

Cookie Nookie for example, has wild honey, chocolate chips and cookie dough flavor added to it.

Choco Choco PB Crave has wild honey, sweet and dark chocolate added to it. This one was my personal favorite. I know you’re all shocked and appalled that I liked the one with two kinds of chocolate in it the best!  Haha…

The Razzle Dazzle has wild honey, white and dark chocolate and natural raspberry flavoring in it.

And last but not least, well maybe least as this was my least favorite, PB Crave Coco Bananas. This one has wild honey, chocolate and natural banana flavoring. I think it was something about the banana flavoring I didn’t care for in this one, which is weird because I love bananas.

I wasn’t sure what to think about this product because the last peanut butter product I tried for a review was terrible, but I went into this with an open mind and I was pleasantly surprised at how much I really liked this product. PB Crave has the rich peanut(y) flavor you want but then adds a touch of sweet with the wild honey and then the excitement of the other flavors and surprisingly, they don’t overpower the peanut butter and they blend well with it as well.

I am giving PB Crave Peanut Butter ♥♥♥♥ (out of 5)

If I had liked all the flavors, I would have given them 5 hearts out of five. It’s peanut butter peeps, so it has some fat. It has some sugar in it from the honey and chocolate, but the sugars are actually quite low. It’s not health food, so I suggest eating it in moderation. Enjoy it as a treat now and then. I just had a fantastic idea….PB Crave would make awesome peanut butter cookies! Wish I would have thought of that before, when I still had some! Oh well…maybe I will have to go get some!

Gluten-Free Honey Mustard Chicken Tenders

Remember that amazing cheesecake I made with Glutino salted caramel and chocolate pretzels? Well, they sent me a bag of their honey mustard pretzels, too. I knew I wanted to come up with an awesome recipe using them instead of just eating the whole bag as is. Although, they are so good, I wouldn’t mind doing so! I came up with a gluten-free honey mustard chicken tenders recipe. Oh hang on, I have something to say…

I apologize for the mix up with my last giveaway. I have been sent product from Udi’s and Glutino Foods recently and I have been giving the go ahead to run giveaways for both companies as well. So when I typed up my giveaway post, I posted photos and links and the whole nine yards, apparently not paying close enough attention to who sent what and got them all mixed up. I even sent my link to the post to the wrong contact person from the company! Talk about embarrassing! I promise to do better from now on…

Recipe: Gluten-Free Honey Mustard Chicken Tenders

Get This:

  • 3 large chicken breasts, cut into strips (or chicken tenders)
  • 1/3 c. heavy cream (or half and half)
  • 1 egg
  • 1 bag Glutino Foods gluten-free honey mustard pretzels, blitzed in the food processor
  • Natures Seasons® (salt and pepper to taste) (I seasoned the chicken AND the cream and egg mixture)
  • 4-5 T. coconut oil or butter

Do This:

  1. Cut fat and anything undesirable from chicken breasts and cut into strips.
  2. Whisk cream and egg together; season with Natures Seasons®.
  3. Blitz pretzels in food processor til fine, but not super fine. You want a little texture.
  4. Warm skillet over med-high heat; melt coconut oil in heated pan.
  5. Once oil is hot, dip chicken into egg and cream mixture and then coat well with pretzel bits.
  6. Carefully place coated chicken into hot oil and cook until golden brown on first side before flipping and cooking until chicken is completely done, about 4m on each side.
  7. Remove from pan and allow to cool slightly on paper towels before serving.
  8. Serve with a side of veggies or a nice big salad.

Note: These are fabulous when they are fresh and good when reheated, but I recommend eating them fresh for the best flavor. You lose the honey mustard flavor when you reheat them for some reason.

Chocolate And Salted Caramel Cheesecake

I am usually one of those people who are all or nothing. When I am on a ‘diet’, I normally say no to anything I would normally consider indulgent. Not because I feel I can’t splurge now and again, but because I can’t do ‘just one bit’ or ‘just one piece’.

Take this chocolate and salted caramel cheesecake for example….

This is not something I would normally indulge in. Something so rich and chocolatey with rich, salted caramel.  So yummy!

BUT, this one I can! This chocolate and salted caramel cheesecake is gluten and (mostly) sugar-free! It can be made completely sugar-free very easily. I made it using a couple of Glutino products because I was coming up with a recipe using their  chocolate and their new salted caramel pretzels. I found a few recipes for gluten-free and sugar-free cheesecake and tweaked them using what I needed to for the crust and topping. Boy, was it tasty! Yeah, I’ll share the recipe!

Chocolate And Salted Caramel Cheesecake  (Click HERE to print recipe)

For The Crust:

Get This:

  • 1 c. almond flour
  • 1 c. Glutino’s Salted Caramel Pretzels, blitzed in the food processor til chunky (if making 100% sugar-free omit these and use 2 c. almond flour or 1 c. each almond and coconut flours)
  • 1/4 c + 1 T. butter, melted.
  • 2 T. Truvia® or sweetener of choice

Do This:

  1. Preheat oven to 350° F.
  2. Mix flour, pretzel bits (if using) and sweetener together.
  3. Pour melted butter over mixture and mix well, making sure to get everything covered and a dough ball begins to form.
  4. Spray a 9″ x 13″ pan with non-stick cooking spray.
  5. Press dough firmly  into bottom of your baking dish.
  6. Bake crust at 350° F. for about 20m or until golden brown.
  7. Allow to cool.
  8. While the crust is baking and cooling, make your cheesecake filling.

For The Cheesecake: 

Get This:

  • 2 (8oz.) packages cream cheese or Neufchâtel, room temperature
  • 2 eggs
  • 1 t. caramel extract
  • 1/4 – 1/2 c. Truvia® or sweetener of choice (more or less to taste)

Do This:

  1. Beat your cream cheese for a minute or so by itself so it’s creamy.
  2. Add eggs, sweetener and caramel extract; beat again til smooth. Set aside.
  3. Once your crust has cooled, spoon onto crust and bake for 25-35m or until you start to see golden brown patches across the top of your cheesecake.
  4. Allow to cool 5-10m before adding toppings.

For Toppings:

Get This:

  • sugar-free caramel sauce (I made my own, I will share my recipe tomorrow)
  • sugar-free chocolate chips or 80%-85% dark chocolate, chopped
  • pecans (optional)
  • Glutino’s chocolate covered pretzels, blitzed in the food processor til chunky (optional)

Do This:

  1. While your cheesecake bakes and cools, make your caramel sauce (recipe coming tomorrow).
  2. Chop your nuts (if using) and your chocolate (if needed).
  3. Blitz your Glutino’s chocolate pretzels in the food processor til chunky.
  4. Now sprinkle nuts, chocolate chips (or chocolate chunks) and pretzel bits over your still warm cheesecake.
  5. Once your chocolate bits have had a chance to melt a bit, drizzle caramel sauce over everything.
  6. Refrigerate for at least an hour before cutting and serving.
  7. ENJOY!!

Note: You can make this recipe completely sugar-free by omitting the pretzel bits in the crust and on top.  I am a product reviewer/recipe developer/giveaway hostess for Glutino and I wanted to come up with a delicious recipe using their new gluten-free salted caramel pretzels.

This recipe was inspired by these cheesecake bars. It came out better than I could have dreamed. Once again, Glutino’s has amazed me with their wonderful product. It gave this chocolate and salted caramel cheesecake a wonderful punch of flavor and I couldn’t have been happier with the results. Even my picky-eater sister thought it was really good, in fact she’s having a piece for lunch as I type this!

For my THM friends, simply leave the pretzels out and use either all almond flour or a combination of almond and coconut flours. This delicious chocolate and salted caramel cheesecake is an S dessert!

Udi’s Frozen Burritos

I’ve told you before and I’m saying it again…I love Udi’s brand. They have continuously impressed me with their top quality, delicious gluten-free foods. From frozen to boxed, it’s always great. Udi’s frozen burritos were no different. They were delicious. They sent me a bunch of different flavors to try and they were all pretty delicious.

Some were breakfast burritos and some were just regular burritos. I enjoyed them all.

See? Fabulous! These Udi’s frozen burritos had lots of flavor, were very filling and use great ingredients such as cage-free and antibiotic free eggs. The bacon and chicken they use is from animals that are hormone and antibiotic-free as well! I love that! I can pronounce all the ingredients on the ingredient lists, which is awesome.

Important Info:

The most fat found in one of these burritos was 10g. The most sodium in one was 470mg. The calories was an amazing 200-250. Carbs in these ranged from 33-39g. Dietary fiber was between 4-6g. The protein range was 8-11g.

I give Udi’s Frozen Burritos ♥♥♥♥ (4 out of 5) I would give 5, but they lack a bit of seasoning (salt). I think my favorite was the Chicken Burrito or maybe the Sausage Breakfast Burrito. Or… 😉

I really enjoyed them and so did my family. I didn’t feel like cooking one evening so we all had burritos! It was fabulous! So easy to prepare… just wrap in a damp paper towel, toss in the microwave for 1m 30s or so and you’re good to go.

Glutino Twinkle Sprinkle Cakes

Today I would like to share with you my review of Glutino’s Twinkle Sprinkle Cakes. I have shared with you before that I think Glutino brand has some of the most consistently good products out there. Between them and one of their sister companies, Udis, I think they could corner the market on gluten-free foods! Their premade food and their mixes are amazing…

These delicious Glutino Twinkle Sprinkle Cakes are no exception. They have great texture and crumble and the vanilla flavor is amazing. Pair that with the candy sprinkles, and you’re darn near perfection friends! I didn’t even frost mine.

These Twinkle Sprinkle Cakes obviously are NOT sugar-free. Of course, they should be eaten as often as can be in moderation, as part of your holiday celebrations. They are not meant to be part of your everyday diet. So please, enjoy with every meal good judgment. 😜

They got 4 out of 5 because the hubs and I thought they were just a smidgen on the dry side, but not enough that I wouldn’t recommend these and not enough that I wouldn’t make them again!!

Udi’s

Apparently Udi’s and I are BFF’s or something because they wanted to send me some gluten-free items to try and then review. Of course, me being the considerate, helping and generous person that I am, I agreed to do this for them. *cough* Once I have done that, we are going to give a free product to one of my readers in a giveaway! WooHoo!! I am PUMPED!!

I am so excited right now, I can barely sit still long enough to type this!! I don’t even know how many times I had to backspace and retype that sentence because I was typing too fast! I’m not even gonna lie.  LOL

I got two boxes of product rom Udi’s!! TWO BOXES!!  They sent me so much stuff!!! I can’t believe how much they sent!! Bagels, muffins, pizza  crusts, burritos, oh my… that’s not even all of it.  So much to review!!!

Today’s review:

Udi’s Soft & Chewy Dark Chocolate Brownie Bites

**note: these are NOT sugar-free, they do have eggs and milk as well**

These are AMAZING. They are moist and full of rich dark chocolate taste. Each brownie bite is actually 2-3 bites for the average person, so they aren’t huge but I was satisfied with one. And that is saying something. I am a huge fan of chocolate! Especially dark chocolate.

My rating system will be hearts since I love them.  1 being horrible all the way up to 5 being fabulous!!

Soft & Chewy Dark Chocolate Brownie Bites  ♥♥♥♥ (out of 5)

If these were sugar-free, they would get 5 hearts! They are made with pure cane juice, which is better than if they were made with refined sugar.

Steel Cut Oats

Udi’s Steel Cut Oats, to be exact. I had never had steel cut oats before today. I have to say, I really like them. These happen to have currants, flax and chai seeds added to them. Udi’s makes some really good gluten-free products. I have been happy with most of their products.

What I like most about these steel cut oats is that there is no added sugar. It’s just certified NON-GMO, gluten-free steel cut oats, currents, flax and chai seeds. Just good, wholesome all-natural, good for you food!

The directions for making the oats is right on the outside of the package, which is nice. I added a little extra something special to mine, cuz that’s just how I roll, yo!

Here’s my fancy lil’ recipe…

Get This:

  • 1 1/2 c. water
  • a pinch of sea salt
  • 1/2 c. Udi’s Steal Cut Oats
  • splash of vanilla
  • 1 t. cinnamon
  • 1-2 T. THM brown sugar
  • 1-2 T. unsweetened vanilla almond milk (optional, if needed for consistency)

Do This:

  1. Boil water and salt.
  2. Stir in oats and vanilla; reduce heat, cover and simmer for 15-20 minutes.
  3. Remove from heat and stir in cinnamon.
  4. Spoon into a bowl and top with brown sugar and almond milk, if using.
  5. Enjoy!

I really liked this warm cereal. It’s perfect for a fall/winter morning! I had this and  cup of coffee with a splash of half and half. For my THM peeps, this is an E meal, so keep your fat to less than 5g and your carbs between 20-45.

Gluten-Free Baking Mixes

Some of you may remember that I am part of a group of gluten-free bloggers for Glutino Foods and I have a job to do here. This month they sent me some gluten-free baking mixes. Holiday baking mixes, to be exact. It’s rough but someone’s gotta do it!  I had to suffer this month and try brownies and peppermint yogurt covered pretzels, among other things coming up!

Glutino Foods makes some of the best gluten-free baking mixes I have ever used.  In fact, they make some of the best gluten-free products in general, that I have had the pleasure of using/eating. I am super impressed with the texture, flavor and overall quality of their products. They are consistently superior to any other product in my opinion.  And I have used quite a few.

They recently sent me a few of their new products. Some ‘Snowflake Pancake Mix’.  A ‘Twinkle Sprinkle Cake’ Cupcake Mix. There was a Corn bread stuffing mix as well. There were a few other holiday baking mixes as well. Some sugar cookies and also a bag of yogurt covered pretzels. Those were super tasty!!

I have only had a chance to try a couple of things, but the couple of things I’ve tried have been so good! A lot of gluten-free baking mixes (some pre-made items you can buy are this way, too)produce dry, flat, tasteless baked goods that, in my opinion are not worth the, usually higher price you have to pay for them! If I’m going to pay a higher price for an item, I want it to at least taste good! I don’t mind paying a little more for something I know isn’t going to make me sick, as long as it tastes equally as good or better.

These ‘Glutino Gluten Free Pantry Gooey Chocolate Merry-Mint Brownie Mix’ brownies did not disappoint! They were perfect brownie texture, fudgy and gooey, with a just a hint of mint.  The white fudge chips that come in the box, to sprinkle on top, bring them to their over-the-top perfection. I may or may not have eaten the whole batch of brownies but the two I sent out with my husband and daughter when they went out hunting Saturday. *wipes fudge from her mouth*

Glutino Merry-Mint Brownies

I give Glutino Gluten Free Pantry Gooey Chocolate Merry-Mint Brownie Mix ♥♥♥♥♥ (out of 5)

This photo does not do these any justice  at all! Can you see how moist and gooey these are??? YUM! Now, I cooked them until JUST DONE. The toothpick had a little bit of batter on the end of it when I took them out of the oven. Not a lot, just a teensy bit. This is vital for perfect brownie doneness. You must take them out when they are JUST DONE. They will continue to cook for a few minutes after taking them out, so take them out when you think they are just done so you don’t over cook them. You don’t want them raw but you don’t want them over done, either.

Gluten-free baking mixes may be a little more tricky, so I would set the timer for 5-10 minutes less than what the box calls for because everyone’s oven is different. Check them when the timer goes off and adjust baking time from there. Better to check a few times and have them come out perfect than to have them over done. I love gooey brownies!
