Big Mac Salad

I’ve been wanting to try this Big Mac Salad for a while now. I hadn’t yet til last night because…well frankly, I’m lazy. You have to make the ‘special sauce’, cook the burger, cut the burger, get all the toppings ready….it’s a little bit of work. But let me just say, this Big Mac Salad IS WORTH IT!!! Now, I haven’t had a Big Mac in a while (gluten intolerant, remember?!?), but from what I do remember of these sandwiches, this is pretty close. And even if it’s not, it’s so good, I DON’T CARE!!

Get This:

For sauce:

  • 1/2 c. mayonnaise
  • 2 T. low sugar (or sugar-free) ketchup
  • 2 t. yellow mustard
  • 2 T. dill pickle relish

For salad:

  • romaine lettuce, shredded or  roughly chopped
  • tomatoes, chopped
  • dill pickles, chopped
  • onions, chopped (optional)
  • cheddar cheese to top hamburger patties (no, you don’t have to put cheese on it, I’m not the boss of you.)
  • hamburger patty, cooked and cut into bite size pieces

Do This:

For sauce:

  1. Combine all sauce ingredients; allow to sit in refrigerator for a few hours for the flavors to mingle.

For salad:

  1. Layer vegetables into a bowl or onto a plate.
  2. Top with cheese covered hamburger patty.
  3. Spread your ‘special sauce’ on top.
  4. Enjoy!

Notes:   This Big Mac Salad is a delicious S for those living the THM lifestyle! Please keep those carbs to 10 or less!  Also, let me remind you that if you do not like any of the ingredients listed, feel free to omit them and only use those you like! This recipe is very versatile and can be used by anyone!

Honey-Lime Cilantro Salad Dressing

As I said the other day, I love salad. Especially when I have a delicious, healthy dressing I can enjoy on it. This Honey-Lime Cilantro Salad Dressing is soooooo good! It has just the right amount of sweet to tangy and the cilantro? SHUT UP!!! I LOVE cilantro!!!  I had some left over chicken I cut up and put on a salad with some tomatoes….

OMGoodness!!! So good!! Just look at it!

Honey Lime Cilantro dressing

You want the recipe??? Right?  I know you do!!

Honey-Lime Cilantro Salad Dressing (Click HERE to print)

 Get This:

  • 1/2 -3/4 c. cilantro (depending on how much you like, I LOVE)
  • 1/2 c. light tasting extra virgin olive oil
  • 1/2 c. lime juice
  • 1/2 c. honey (or sweetener of choice)
  • 1 clove garlic (minced)
  • YOU WILL ALSO NEED greens of choice, cooked chicken, whatever veggies you enjoy on your salad

Do This:

  1.  Put all ingredients in a blender; pulse to mix.
  2. Blend 30-40 seconds or until blended well.
  3. Pour over salad or whatever you desire.

Notes:

I’m guessing this would make a great marinade, too. For chicken or fish. Maybe add some jalapeno for a kick!

Please, please, please, try this Honey-Lime Cilantro Salad Dressing!! Once you do, I think you’re going to want to make it again and again! I know it’s a favorite in my house! Along with strawberry dressing I shared the other day, this is one I could eat every day and never get sick of it!

Strawberry Salad Dressing

I have shared this strawberry salad dressing recipe before, but since this is going to be strictly a food and recipe blog, I am going to share it here as well. This recipe is AMAZING.

I actually have two versions of it. One calls for  quite a bit of oil and one calls for a little. I am going to share the one with less oil. I don’t see the point in using a ton of oil when it isn’t necessary. Even though it is evoo, which is relatively healthy.

I enjoy eating salads all year round and I get bored with eating boring old ranch salad dressing. So I am always looking for good salad dressing recipes that are low-fat or non-fat and always sugar-free or very low-sugar. I really wasn’t sure I would like this one at first, because it had fruit, lettuce and meat all in the same dish.  Yeah, I’m not one to mix my foods like that.  But I’m glad I tried it because this strawberry salad dressing is actually pretty amazing!

Strawberry Salad Dressing

It looks pretty good on a plate too, I must say!

Strawberry Salad Dressing (Click HERE to print)

Get This:

  • ¼ c. cider vinegar
  • 1 T. minced onion
  • ¾ t. paprika
  • ¾ t. Worcestershire sauce
  • ¾ c. truvia (or sweetener of choice)
  • 1 – 1 1/2 c. fresh strawberries, washed, hulled and chopped (can use frozen)
  • 1 c. no sugar added applesauce
  • ¼ c. light tasting olive oil
  • fresh strawberries, fresh blueberries, spring greens (or your favorite greens) and cooked chicken breast.

Do This:

  1.  In a blender combine all ingredients except oil.
  2. Once blended well, add oil slowly, a little at a time, blending well after each addition until all the oil is added.
  3. Blend well.
  4. Top favorite salad greens with fresh strawberries, blueberries and cooked chicken.
  5. Pour fresh dressing over top of everything.
  6. Enjoy!

This salad dressing is the perfect blend of tart and sweet and goes well with the slight bitterness of spring greens, but you can use any greens you like. I know I said this is a great summer salad, but I really enjoy this any time of year…it is cheaper to make in the summer, though because the berries are in season then. I do convince the hubs to buy them every now and again in the off-season because I do love this salad dressing so very much!!
