Glutino Twinkle Sprinkle Cakes

Today I would like to share with you my review of Glutino’s Twinkle Sprinkle Cakes. I have shared with you before that I think Glutino brand has some of the most consistently good products out there. Between them and one of their sister companies, Udis, I think they could corner the market on gluten-free foods! Their premade food and their mixes are amazing…

These delicious Glutino Twinkle Sprinkle Cakes are no exception. They have great texture and crumble and the vanilla flavor is amazing. Pair that with the candy sprinkles, and you’re darn near perfection friends! I didn’t even frost mine.

See?!? No frosting! You can frost yours if you want, I’m not the boss of you.

These Twinkle Sprinkle Cakes obviously are NOT sugar-free. Of course, they should be eaten as often as can be in moderation, as part of your holiday celebrations. They are not meant to be part of your everyday diet. So please, enjoy with every meal good judgment. 😜

I give Glutino Twinkle Sprinkle Cakes. ❤❤❤❤ (out of 5)

They got 4 out of 5 because the hubs and I thought they were just a smidgen on the dry side, but not enough that I wouldn’t recommend these and not enough that I wouldn’t make them again!!

Pumpkin Cream Cake

Let’s face it, one the reasons we all detest diets is because we want to be able to enjoy our dessert.  Well, what if I told you that you can enjoy your dessert AND lose weight?  Yup, you heard me correctly.  Eat your dessert AND lose weight. The THM way!  Take this pumpkin cream cake for example.  I took a few different recipes I found and squished them all into one and came up with this delicious little cake. You could probably make muffins out of it too, if you wanted.

Did you know pumpkin is a super-food??  It is!  It’s so good for you!  I hope y’all like this recipe as much as I do! It’s gonna be a great breakfast tomorrow morning with coffee!!

Pumpkin Cream Cake

Pumpkin Cream Cake (Click HERE to print recipe)

Get This:

  • 1 15 oz. can pure pumpkin puree (NOT pumpkin pie filling)
  • 1/2 c. almond flour
  • 1/4 c. oat flour
  • 1/4 c. coconut flour
  • 1/2 c. (one stick) butter, softened
  • 3 eggs
  • 1/2 c. splenda, truvia, xylitol, erythritol, sweetener of choice
  • 1 t. aluminum free baking powder
  • 1 t. vanilla
  • 1 t. pumpkin pie spice
  • 8 oz. cream cheese, softened
  • 3 T. splenda, truvia, xylitol, erythritol, sweetener of choice
  • 1 egg
  • 1 t. vanilla
  • 1/2 t. pumpkin pie spice

Do This:

  1. Preheat oven to 350° F. and prepare a 9″x5″ loaf pan by spraying it with non-stick cooking spray.
  2. Mix everything for cake (all ingredients up to, but not including cream cheese) together in a medium size bowl til combined well.
  3. In a separate bowl mix everything else til smooth.
  4. Scoop half of the cake mixture into prepared pan and smooth out.
  5. Next, pour the cream cheese mixture into the pan on top of the cream cheese mixture.
  6. Scoop the rest of the cake mixture over the cream cheese and smooth out.
  7. Place on middle wrack of oven and bake for 45-60 minutes or until a nice golden brown and the middle is set.
  8. Allow to cool at least 20 minutes before cutting.

Notes:  This recipe is a delightful S for all my THM friends. I prefer eating this after it has been refrigerated. Just a personal preference. I think it sweetens more after refrigeration.

Coffeecake Connection Company

I got connected with CCC by chance on Facebook, through Christine Welch, who happens to be the OWNER of The Coffeecake Connection Company (CCC). I don’t remember how we came to be acquainted, but the important thing IS, we did!

Because look at what I got in the mail the other day…

It all came wrapped beautifully in a pretty box tied in a bow of twine, with paper confetti ribbons in the box!  It really was quite lovely.  I should have taken a before and after!  She sent me a small variety of just about everything they sell and, can I just say, ‘WOW!’

They make several different kinds of cookies, brownies, coffee cakes, cake-a-lettes (cupcake/muffin), and they also sell a couple of flavors of frozen batter (I believe a Chocolate and Signature) that can be used for anything you can think of.  It comes ready-made and you can just scoop and use. From donuts to coffee cake, anything you can think of you can probably make with it! You are going to be able to order that and have it shipped soon! As of right now you can only buy it at their headquarters in Chicago and at some stores.

I was super stoked to try the cookies as they are ginormous and looked so very good! I was not disappointed AT ALL!  Their cookie flavors include: Snickerdoodle, Milk Chocolate Chunk and Cranberry White Chocolate.I was sent one of each and I can attest that they are all very good!

Their brownie flavors include: Milk Chocolate and Chocolate Caramel.  I was sent two of the milk chocolate brownies.  They are also very good.  A little on the dry side, but still very good. I am going to ask them about what they use to make them and see if I can help them out with the dryness…. 😉

The cake-a-lettes flavors include: Signature, cinnamon, chocolate chip, double chocolate chip, and triple berry.  I was sent the triple berry, chocolate chip and Signature flavors.  I tried the chocolate chip one and the triple berry.  The chocolate chip one was not very good. The chocolate chip cake-a-lette was a little dry and didn’t have a lot of flavor.  I think was just a fluke, because during shipping  it’s little case had popped open and it was completely upside down in it.  The triple berry one was VERY GOOD.  Nice and moist.  The cake was just sweet enough and the berries were a fabulous addition to the little cake! These are to be frozen or refrigerated and the company… and I recommend warming them slightly before eating.  Just 10s or so in the microwave and they are perfect!

So overall, I can say that this is a great company and now I will give you the actual review…

Coffeecake Connection Company  ♥♥♥♥♥

Five hearts!  I can totally recommend this company!  Their goodies are totally gluten-free made in a gluten-free facility and the products have fabulous flavor and texture.  I would recommend these treats for any get-together… Mother/Daughter banquets, family reunions, graduations, ANYTHING that you need gluten-free sweet treats for and you don’t want or can’t make them yourself for.

Now let me state these are NOT sugar-free OR low-calorie, or anything of the sort!  These are for SPECIAL OCCASIONS and TREATS! Not something I would ever recommend on a daily basis!  Everything in moderation! These lovely baked goods would make WONDERFUL gifts for loved ones and friends!

Pineapple Upsidedown Cake

First, let me just say how excited I am to be bringing you another review! The review isn’t of the pineapple upside down cake, but of the baking mix I’m using, that being said… there will be more reviews to come!!  This little blog of mine has really taken off and I couldn’t be more pleased! This is an adaptation of my MIL’s pineapple upside down cake. I knew almost immediately what I wanted to do when I saw the yellow cake mix in the box of mixes better batter sent me. Actually I really wanted to make my MIL’s rhubarb upside down cake, but since rhubarb’s not in season, pineapple upside down cake it was! The original cake is a homemade cake, but I knew I could make it work with this! So here’s the recipe!!

Easy GF Pineapple Upside Down Cake (Click HERE to print recipe)

What You’ll Need:

  • 4 T. butter
  • pineapple rings
  • 8 maraschino cherries
  • 1 box better batter gluten-free yellow cake mix
  • 1/2 c. water
  • 1/2 c. pineapple juice (drained from pineapple)
  • 1/2 c. apple sauce
  • 1/4 c. coconut oil, melted
  • 3 eggs
  • 1 c. Splenda® brown sugar mix (feel free to use regular brown sugar)

Note: Cake box calls for 3/4 c. oil. I don’t like using that much oil.  If you don’t care,  simply replace 1/2 c. applesauce and 1/4 c. oil for the full 3/4 c. oil.

What To Do:

  1. Preheat oven to 350° F. Lightly spray a 9×13 baking pan.
  2. Melt butter in the bottom of baking pan.
  3. Sprinkle brown sugar evenly over butter.
  4. Place pineapple rings in bottom of the baking pan 4 across, 2 down.
  5. Place the maraschino cherries in the center of the pineapple rings.
  6. In the bowl of an electric mixer blend cake mix, water, pineapple juice, apple sauce, oil and eggs at low-speed until moistened (about 30 seconds). Beat at medium for 2 minutes.
  7. Pour batter carefully over pineapple and cherries in baking pan.
  8. Bake 35-40 minutes.  Cake is done when a toothpick inserted in the center comes out clean.
  9. Cool in pan on wire rack for 15 minutes.  Then turn out onto serving plate to cool completely.
  10. Serve plain or with a dollop of whipped topping.

FABULOUS!!

This cake is very good.  Great taste. Great texture.  I love that is says on the box that it is a product of the US. It states clearly that it is gluten-free, kosher and acceptable for other allergies and conditions. Maybe best of all, I can pronounce every ingredient.  The company gives to charities and helps people who can’t afford their products get them.  What’s not to love, friends?
